I have been eating a lot of kale lately and I have found that it pairs really well with tahini, which is what makes this Kale Tahini Salad so tasty.

Ingredients:

Dressing

2 limes juiced

Zest 1 lime

2 tablespoons fish sauce

2 tablespoons ponzu sauce

2–3 tablespoons sweet Thai chili sauce

1–2 garlic cloves minced or grated

1 tablespoon fresh ginger grated

2–3 tablespoons tahini

Salad

1 (1-ounce) bag frozen shelled Edamame, defrosted and cooked

3 carrots, shredded

2 bell peppers (red, yellow, or orange), thinly sliced

3–4 cups baby kale or other dark leafy greens

2 lemongrass stalks, chopped

4 green onions, chopped

¾ cup of fresh basil and cilantro

4 hard-boiled eggs, diced

¼ cup black and/or white sesame seeds, toasted
